WebMicrogreens are the result of small plants that have been grown to a much smaller plant size, typically less than 2 inches tall. They take just weeks to grow and are eaten within 3-4 weeks after harvest. Baby greens refer to larger versions of the same plant that grow back after cutting them. WebMicrogreens are defined as the stage when a plant has sprouted and grown leaves, but it is not anywhere near full maturity. Using this simple definition, anything from seed can turn into a microgreen; it depends on when it’s harvested. Usually, microgreens are harvested 10-14 days after planting.
